Situated on the Teakle property in Port Lincoln, 2 kilometres from the foreshore, with 150 meters elevation. The soils are rich combination of sandy loam topsoil overlying a friable red-brown clay loam subsoil. The moderately warm summer temperatures and maritime breeze allow perfect ripening conditions in the vineyard. The long sunshine hour days encourage even ripening of the grapes, while the gentle breeze helps cool the bunches, retaining the beautiful natural acidity.
The Late Harvest Semillon was left on the vine to maximise the sugar content until late March. The Baume was 14 degrees when it was handpicked into small picking bins and transported to Clare in a refrigerated truck, to O’Leary Walker Winery. The result of leaving it on the vine is that there is very little juice left in the berries and the sugar and flavour content is increased. We harvested 1.6 tonne of fruit from the vineyard which yielded 690 litres of juice. The grapes were crushed and destemmed into a membrane press to separate the skins and seeds from the juice. The juice was inoculated with yeast, and fermentation commenced. Fermentation was halted by chilling the wine to retain the natural fruit sweetness that is found in late harvest style wines. The wine was then racked, stabilised and filtered prior to bottling in April 2019.
This Late Harvest Semillon is perfectly suited as a wine to start the meal, as an aperitif, or as a dessert wine. The palate is rich and creamy with flavours of candied lemon rind and buttery nutty finish. It has a balanced sweetness and acidity giving it freshness and punch. Match to intensely flavoured cheeses or any rich buttery desserts. Drink now as a delicious young wine but with years of cellaring will reward the consumer with an incredibly intense, complex golden wine.
