ATTRIBUTES

The 2023 Killer White Sauvignon Blanc is intensely aromatic and true to its varietal roots, with captivating scents of freshly cut grass, peas, and asparagus. On the palate, it offers a vibrant range of tropical fruits, including passionfruit, apple, and citrus. Fermented dry with no residual sugar, the wine’s apparent sweetness is derived entirely from its rich fruit flavors. It is ready to enjoy now, but will maintain its fresh and bright character with short-term cellaring. Vegan-friendly.

WINEMAKING

Harvested in the early hours of March 16th, 2023, the Sauvignon Blanc grapes were machine-picked to ensure they arrived cold and fresh at our state-of-the-art winery. Built in 2019, our winery was honored with the Best Building Excellence Award in the $2-5 million category at The Master Builders SA Awards.

The grapes were crushed and destemmed into a membrane bag press for gentle de-juicing. The juice was then transferred to stainless steel tanks for cold settling over 8 days. After racking off the grape solids, the juice was warmed, inoculated with neutral dry wine yeast, and underwent fermentation for 14 days. Following fermentation, the wine was settled, stabilized, clarified, and filtered before bottling in June 2023.

VINEYARDS

Our Sauvignon Blanc is grown on the Teakle property in Port Lincoln, 2 kilometers from the foreshore at an elevation of 150 meters. The vineyard features a rich blend of sandy loam topsoil overlying friable red-brown clay loam subsoil. The combination of moderately warm summer temperatures and a maritime breeze provides ideal ripening conditions. Extended sunshine hours promote even grape maturation, while the gentle breeze helps cool the bunches, preserving their natural acidity. The Sauvignon Blanc vines, planted in the 1980s, are cane-pruned to optimize fruit quality.
